(Prep + Cooking Time: 45 minutes | Servings: 4) Ingredients: 2 cups black rice, washed and rinsed 6 ½ cups water 3/4 cup sugar 5 cardamom pods, crushed. 3 cloves 1/2 cup coconut, grated Chopped mango for serving 2 cinnamon sticks A pinch of salt Directions: Put the rice in your instant pot, add a pinch of salt and the water and stir In а cheesecloth bag, mix cardamom with cinnamon and cloves and tie it. Place this in the pot with the rice, close the lid and cook on Low for 35 minutes Release the pressure naturally, open the instant pot lid, stir the rice, add coconut and set your pot to sauté mode Cook for 10 minutes, discard spices bag, transfer to breakfast bowls and serve with chopped mango on top.

Pumpkin Rice Pudding

(Prep + Cooking Time: 1 hour | Servings: 6) Ingredients: 1 tsp. pumpkin spice mix 1 cup brown rice 1 cinnamon stick 1 cup pumpkin puree 1/2 cup maple syrup 1/2 cup water 1 tsp. vanilla extract 3 cups cashew milk 1/2 cup dates; chopped A pinch of salt Directions: Put the rice in your instant pot, add boiling water to cover, leave aside for 10 minutes and drain Pour the water in milk in your instant pot, add rice, cinnamon stick, dates and salt; then stir well. close the lid and cook at High for 20 minutes. Quick release the pressure, carefully open the lid; add maple syrup, pumpkin pie spice and pumpkin puree; then stir well. set the pot on Simmer mode and cook for 5 minutes. Discard cinnamon stick, add vanilla; then stir well. transfer pudding to bowls, leave aside for 30 minutes to cool down and serve
